Their sturdy stainless steel construction dominates as a building material even in the sear plates, which are placed inside the cooking chamber for uniform heat distribution both in the front and in the back of the chamber. The sear plates provide additional heat surface by capturing and evaporating the broth from the food, while protecting the roasts from the flames that are created during grilling.
