This Deba knife is the heavy, thick Japanese knife used primarily for cutting and filleting whole fish. Its weight helps the blade penetrate the head and coarse bones more easily, while its fine nose makes it easier to kiss the flesh of the fish. It can also be used for meat or poultry, but is not recommended for cutting large bones.
